
Try our recipe for a nicely warming asparagus soup.

Thaw one pound of white asparagus, cut it into 1-inch pieces, and put these in a soup bowl.

Bring 2 pts of good broth to a boil.

Stir together 1 T butter and 1 ½ T flour.

Pat it into the broth and let simmer for a while.

Take the pan off the heat.

Mix together 2 egg yolks with ½ Cup of cream.

Pour the mixture into the broth stirring it vigorously.

Let simmer for a few minutes, though it must not boil.

Finish it off with a touch of luxury, adding peeled shrimps and parsley.
